Soffrito seems to be a broadly used and somewhat misleading concept for many. For us, it is simply a base of flavoring that we make ahead of time, so we can quickly build flavors in sautéed dishes that don’t require long cooking times, such as Snap Peas & Tendrils with Prosciutto, Soffrito & Mint. The vegetables can vary but we generally just use celery, carrot, and onion, which allow us to add garlic or chiles later, when called for.
