Try to get your hands on some Spanish red garlic. This variety has larger cloves and tends to be easier to peel.
Carefully cut the garlic cloves into slices 1 mm thick. The most important thing here is to get slices that are the same thickness so they fry up evenly.
Rinse the sliced garlic in a sieve under cold running water for about 2 minutes. This will help take out some of the natural bitterness in the garlic. Dry on a kitchen towel, patting the cloves to draw out as much water as you can.
