This is my favorite of a slew of recipes we have tinkered with over the years using yams. Yams are abundant and cheap in the winter months and customers find them soul-satisfying and delicious. This recipe plays salty against sweet and spicy against creamy; the lime and green onions provide the high notes. Tossing yams in honey before roasting them helps to bring out their sweetness and encourages a crusty caramelized exterior.
