The cool, stubby Thumbelinas are our favorite carrots for this dish, but any small carrot works well. Just don’t confuse those mechanically formed carrot pieces sold in plastic bags for baby carrots. Look for small varieties at your farmers’ market in the fall and winter. Generally, you can just scrub these before using and forget about peeling them. I like to serve these alongside a couple of other vegetable dishes, and with roasted or braised meats.
