With its enjoyably high fat content, neck of lamb is a very tender and giving cut, easy to find and good for the purse. No pussyfooting around here: this sauce is exceptionally garlicky, but with that deep, sweet taste that comes from roasting the garlic in the oven. It is essential that the garlic be large, very hard when pinched and with no signs of green shoots sprouting from the cloves, as this gives it an unpleasant taste.
