Turtle beans are another name for frijoles negros, or, in other words, plain black beans. You won’t be needing any turtle. This soup was made up of stuff that happened to be in my icebox. One of these things isn’t likely to be in yours: chorizo, a hard garlic sausage that I mush down to a special Mexican food store on Fourteenth Street to get at. You may substitute Italian pepperoni, which are easily available, with good effect.
