  • Tomatoes, quite ripe
  • chilli vinegar
  • salt
  • garlic ½ oz.

Method

  1. Bake quite ripe tomatoes till they are perfectly soft.
  2. Rub the pulp through a sieve.
  3. Add as much chilli vinegar as will make it a fairly thick cream.
  4. Slice the garlic or shallot and boil all together for 15 minutes.
  5. Take the scum off.
  6. Strain it through a sieve to remove the garlic or shallot.
