- Tomatoes, quite ripe
- chilli vinegar

Method
- Bake quite ripe tomatoes till they are perfectly soft.
- Rub the pulp through a sieve.
- Add as much chilli vinegar as will make it a fairly thick cream.
- Slice the garlic or shallot and boil all together for 15 minutes.
- Take the scum off.
- Strain it through a sieve to remove the garlic or shallot.
