  • Plain flour ½ lb.
  • butter 6 oz.

Method

  1. Sift the flour and salt into a mixing bowl.
  2. Break in the butter in pieces the size of walnuts.
  3. Add the lemon juice and sufficient very cold water to mix well together into a stiff paste.
  4. Flour the board.
  5. Roll out three times.
  6. If there is time let it stand in a cool place for half an hour, then use.
