This also is Yorkshire and reached this book by way of Ross-on-Wye. At Bath in the days of Beau Nash these were known as solid syllabubs.

Ingredients

  • castor sugar, 4 oz.
  • lemon, the juice of one, and half the grated rind
  • sherry 2

Method

  1. Wash the lemon, grate the rind and put it into a large mixing bowl.
  2. Squeeze the juice of the lemon; strain and put that also into the bowl.
  3. Mix in the sugar.
  4. Add the sherry, and when the sugar is dissolved, add Β½ pint cream.
