Ratatouille has spread from the Mediterranean to the South-West with the courgette one of its main ingredients. But as a vegetable in its own right it has become widespread in various forms – green, yellow or even striped and circular (intended for stuffing). This delicious summer soup is given a local twist by the addition of a little walnut oil.
