  • ¼ pound salt pork, diced
  • 2 tablespoons olive oil

Method

Sauté salt pork in olive oil until golden. Remove. Add finely-chopped onion and sauté in resulting fat until transparent. Add diced fish, sliced potatoes and tomatoes, and sauté for a minute or two more. Then add water and simmer for ½ hour, or until potatoes are tender. Add the milk and simmer 5 minutes more. Season to taste with salt and freshly-ground black pepper.
