  • 2 heads lettuce
  • 6-8 tablespoons olive oil
  • 2 tablespoons

Method

Wash and prepare lettuce. Shake dry in a salad basket, or dry each leaf carefully in a clean tea towel. Wrap in tea towel and allow to crisp in refrigerator until ready to use.

To Make Dressing

Combine olive oil, wine vinegar, cream and crumbled Roquefort in a small bowl and whisk until smooth. Add freshly-ground black pepper and Tabasco, to taste,
