Method

Prepare Cos lettuce; wash and drain. Combine olive oil, wine vinegar, grated cheese and garlic in a large salad bowl and season to taste with salt, freshly-ground black pepper and lemon juice. Sauté diced bread in butter with a little garlic. Add diced ham and torn lettuce, and toss lightly. Then add egg yolks and toss salad until every leaf glistens. Top off with garlic croûtons and anc
