  • 2 large boniatos (about pounds total; see Note), peeled and cut into ½-inch dice
  • Coarse salt
  • 4 tablespoons

Method

  1. Place the boniato in a large pot with cold salted water to cover and slowly bring to a boil over medium-high heat. Reduce the heat to medium and gently simmer the boniato until very tender, about 10 minutes.
  2. Drain the boniato well and return to the pot. Mash with a potato masher. Or place the boniato in a mixer fitted with a paddle or dough hook and mash. You c
