  • 4–6 saltwater catfish (gutted, with skins on—catfish have no scales)

In a skillet, fry the fatback. When done, set the fatback aside, leaving excess grease in the skillet on medium heat. Wash the catfish and shrimp. Place the catfish in the skillet and fry 2 to 4 minutes, until brown on one side. Add the shrimp on top of the catfish, along with the onion, bell pepper, scallion, and cooked bacon.
