Method

Boil the pig tails about 15 minutes in a medium pot, half filled with water. Drain and rinse with warm water. Return the tails to the pot, half filled with fresh, warm water, and add the tomatoes (or tomato paste), onions, and a little salt and pepper. Cover and boil about 45 minutes, stirring occasionally, until the pig tails are tender and the gravy thickens. Adjust the seasoning to taste. Ad
