Here’s how we make the barbecue sauce in my home state. Usually served on the side rather than on the meat, this thin sauce can be used for dipping, topping, or as a mop sauce (brushed onto the meat throughout cooking to flavor it and keep it moist—so named because in large barbecue restaurants it is applied with an oversized brush that resembles a mop).
