MY wife didn’t really like cauliflower until she met me. Now she loves it, and so do our kids. Cauliflower needs to be cooked until tender to bring out its rich, sweet flavor, which undercooked, still-firm cauliflower never has. It also needs to be seasoned generously to coax its flavor out, but only after its been boiled. I have found that white vegetables are actually sweeter if they are boiled in unsalted water.
