In Italy, where crêpes are called crespelle, they are used in baked savory dishes very much like pasta is to make cannelloni. I am a pasta lover at heart, so whenever my mother would make crespelle, I always wished it was pasta instead. As I grew older, however, I learned to appreciate crespelle. My love for pasta has not waned, but I now enjoy crespelle just as much. It may have been our daughters who brought me around. They love making crêpes with a good friend
