One of the easiest and most appealing of appetizers, tomato bruschetta comes together in minutes when you have ripe, juicy tomatoes on hand. Fresh mint adds an unexpected flash of flavor and fragrance, but you can substitute the classic fresh basil, if you like.

Ingredients

  • ripe tomatoes, preferably a combination of red and yellow, 1 lb (500 g)
  • extra-virgin olive oil, 2 <

Method

  1. Preheat oven to 350°F (180°C).
  2. Core tomatoes and cut in half horizontally. Gently squeeze out seeds, using your fingertip to nudge them if necessary, and discard. Dice tomatoes and put in a bowl. Drizzle in 1
