This elegant, Japanese-inspired dish is a fast and delicious way to add greens to a meal. The spinach takes seconds to cook, and is easily shaped into little bundles for a unique presentation. Pack leftovers in an airtight container to add to your brown-bag lunch.

Ingredients

  • spinach, lb (750 g), stemmed and rinsed well
  • sake or dry white wine

Method

  1. Have ready a large bowl of ice water and place a colander in sink. Bring a pot of lightly salted water to a boil over high heat. Add half of spinach and cook just until wilted, about 1 minute. Using a slotted spoon, transfer spinach to ice water and stir gently to cool, then immediately lift out and transfer to colander to drain. Repeat process to cook, cool, and drain rema
