Here’s a switch on traditional latkes: handsome orange Hanukkah pancakes made from grated sweet potatoes. As in the preceding recipe, we “bake-fry” the latkes on an oiled baking sheet in the oven, which dramatically slashes the fat. To keep the latkes crisp (sweet potatoes tend to soften when baked), I recommend making small pancakes, which are quick to crisp. The cinnamon and nutmeg add a sweet note: I’ve made them optional.
