A classic treatment for Dungeness crab, here pungent Chinese black bean sauce complements sweet, meaty Maine lobster. Of course, you can substitute one whole Dungeness crab for the lobster and jumbo shrimp make a delicious and quick substitute as well.
Dispatch the lobster. Split the lobsters in half lengthwise and gently crack the claws or use shears to open up the shell. Remove and discard the long, thin dark intestinal vein that runs the length of the lobster and also the lumpy head sac located near the eyes. Using a cleaver, chop the lobster into 1-inch (2.5-cm) pieces. Pick out any shell splinters.
