Look for deboned shad in the market, as removing the bones at home is painstaking. Here, this delicate fish is coated in melted butter, quickly broiled, and simply served with lemon wedges.

Method

Preheat the broiler to the highest heat. In a baking pan just large enough to hold the fillets in a single layer, melt the butter over low heat on the stove top. Rinse the shad fillets in cold water and pat dry with paper towels. Dip the fillets into the butter and turn to coat on both sides.

Broil the fish skin side down about 4 inches (10 cm) from the heat source, basting a few times
