Poke, which means “to cut into pieces” and is pronounced “poh-kay,” is a favorite Hawaiian preparation. Before refrigeration was available on the islands, salt was added to raw seafood as a way of preserving and keeping fish fresh. Other sushi-grade fish, such as salmon, char, or halibut can be used in this recipe. Serve with tortilla chips, rice crackers, shrimp chips or on rice.
