Ingredients

For the Marinade

  • 10 cloves garlic, coarsely chopped
  • 3 to 4 tbsp each of the following chopped fresh herbs: oregano, basil

Method

Make the marinade

In a mortar or a mini food processor, mash the garlic together with the herbs and salt until you have a coarse paste. Stir in the oil, vinegar, and white pepper.

Set aside half of the mixture in a separate bowl.

Divide the other half between the steaks. Thoroughly rub it in with your hands. Set them aside to marinate for at least 1 hour.
