Financiers aren’t ordinary cakes. The browned butter and the egg white turn them into indescribably delicate, airy almond treats. You can buy them on every Paris street corner, but I don’t see them much in the Netherlands. They’re the easiest cakes in the world to make yourself. Pretty crazy, huh?

Ingredients

  • ½ cup plus 2 tbsp (150 g) unsalted butter

Method

Preheat the oven to 400°F 200°C). Thoroughly grease your financier pans. Heat the butter in a small saucepan over medium-low heat until the solids sink to the bottom of the pan in small crumbs and the fat becomes nicely dark and hazelnut colored and clear. This takes about 15 minutes,
