Remove the large ends of the orange and lemon, cut in quarters lengthwise, remove seeds, and thinly slice crosswise. Peel, core, and chop the apples as small as you wish. Add water or a complimentary juice. More liquid may be needed during cooking.
Simmer everything for about an hour, stirring often. Cool enough to measure and then add an equal amount of sugar.
