For all these relishes, first wash and pick over the cranberries, discarding any soft berries. Then grind them or whir in a blender or food processor until they are as finely ground as you prefer. Mix all the ingredients well and store in the refrigerator. Powdered spices may be added for additional taste. Letting the relish age for a few days will improve and blend the flavors.
