This quick and satisfying all-in-one meal is ideal for a relaxed weekend brunch when you want to serve something delicious but not do a ton of dishes the rest of the morning (in other words: more time for mimosas!). We love this with plenty of chili crisp and some crunchy country-style bread.


  • 3-4 large Yukon Gold potatoes (about lb total weight), cut into ½-inch (12-mm) cubes and patted dry
  • 3 tablespoons olive


Preheat the oven to 425°F (220°C). Place the potatoes in a large bowl and toss with the oil, granulated garlic, granulated onion, paprika, 1½ teaspoons salt, and a few generous grinds of pepper.

Transfer to a nonstick rimmed baking sheet and spread into an even layer.
