  • 2 egg whites
  • 135 g (5 oz) icing (confectioners’) sugar

Method

  1. Put the egg whites and icing sugar in the bowl of a freestanding electric mixer.
  2. Fill a saucepan three-quarters full with water and sit the bowl (with the egg whites and sugar in it) over the top of the pan, ensuring the base of the bowl isn’t touching the water.
