Seasoning rice with lime, coriander and chillies is a bracing combination typical to many regions of the world: Mexico, the Middle East, Southeast Asia, India. It is a dish of elegant simplicity, with intense flavour. Make it as mild or hot as you like it, or offer the chillies separately, for each diner to add as he or she desires.

Serve with any sort of rich curry, or with spicy grilled meats or duck.
