This sprightly dish of lightly cooked chicken, splashed with vinegar then served chilled with lemon-marinated onions is invigoratingly fresh - perfect to wake up a palate dulled by too much rich food.

Serve followed by Aztec Corn and Curried Stuffed Potatoes, as well as a mixed green salad. Or serve with black beans, corn tortillas and Roasted Green Jalapeño Salsa.
