I used to avoid making artichoke pasta sauces because I found artichokes to be too mild to adequately season pasta. Then I discovered the trick to more intensely flavor artichoke sauces: Simmer the artichoke trimmings and use the resulting water to make the sauce.

Ingredients

  • 1 lemon
  • 3 large or 4 small to medium artichokes
  • Salt

Method

  1. Cut the lemon in half. Trim the artichokes, rubbing the cut parts with a lemon half. Save the artichoke tops. Squeeze the juice from the remaining lemon half into a medium bowl and fill the bowl halfway with water. Cut the trimmed artichokes lengthwise in half, thinly slice, and put them in the lemon water.
