Juicy lemony tofu with crunchy coating, dipped in tartar sauce—who needs to destroy our oceans for fish? Not us humans. This takes a few plates and a little bit of attention to detail, so don’t save this for a speedy weeknight dinner. Instead, set aside an hour or so on a Sunday night to make this special treat.


For the tofu fish sticks

  • 2 (14-ounce/400 g) packages extra-firm tofu, drained and pressed
  • 2 tablespoons tamari
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh nori or kelp powder, plus extra for garnish (optional)
  • ½ cup (65 g) plus 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 cup (240 ml) cold water
  • 1 cup (80 g) panko breadcrumbs
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • Chopped fresh flat-leaf parsley, for garnish


    1. Preheat the oven to 450°F (230°C). Line a large rimmed baking sheet with parchment paper and spray with nonstick cooking spray. Slice each block of tofu into 16 sticks. Have ready two dinner plates and a wide shallow bowl.
    2. On one of the plates, mix the tamari, lemon juice, and nori powder.
    3. In the bowl, toss the flour and cornstarch. Add the water and stir vigorously with a fork to make a thick, smooth batter.
    4. On the other plate, mix the breadcrumbs and salt. Drizzle in the oil and use your fingertips to coat the breadcrumbs.
    5. One at a time, dredge a tofu stick in the tamari mixture, then into the batter, and let the excess drip off. Transfer to the breadcrumbs plate and use the other (dry) hand to sprinkle a handful of breadcrumbs over it to coat completely. Gently press breadcrumbs into the tofu to help them stick. Transfer the tofu to the prepared baking sheet and repeat with the remaining tofu sticks.
    6. Bake tofu sticks for 10 minutes. Flip and bake for another 8 to 10 minutes. The sticks should be crisp and varying shades of brown. Taste one to check for doneness.
    7. Mix together the tartar sauce ingredients. Serve the fish sticks as soon as possible with the tartar sauce. Sprinkle them with extra nori powder, if you like, and some fresh parsley, too.
