Roasting fresh sweet corn on the cob and in the husk gives a very different flavor from boiling it. Nature has prepackaged the rows of tender seeds within their own wrapper, better than plastic or foil, because the wrapper sweetens while it protects. The The Corn Cook Book (1918) advises the cook to keep the husks on, after removing the inner silk, whenever boiling or steaming “green corn on the cobs.” But when you roast corn on a grill, or under a br
