Tony Garcia grows all kinds of squash in his garden, but what he calls “Tewa” squash is the green-and-white-striped cushaw, one of the oldest of Indian squashes, the seeds of which have been found in excavated sites such as Chaco Canyon. But any garden squash is good, fresh and green, sautéed with a little onion, and made greener yet with the addition of green chili.
