Anyone in New Orleans knows that red beans and rice is a Monday dish, to soak up the Saturday night hangover, to use up the Sunday noon ham bone, and to spare the Monday washday cook who has spent the day over a hot tub and has no inclination to spend it over a hot stove as well. Anyone in New Orleans also knows that the place to eat red beans and rice is Buster Holmes’ watering hole on the corner of Orleans and Burgundy in the French Quarter. Buster was born in Poi
