Cajun Dirty Rice

Clean rice is as white as a hound’s tooth. Just as “dirty rags” was a name for jazz, so “dirty rice” is a name for what happens to rice when you jazz it and color it with chicken gizzards and livers and a little ground pork. Even though rice so dirtied is a funky Cajun dish, it got into the Junior League’s River Road Recipes and it gets served with roast quail at Commander’s Palace. I find it too hef
