Crawfish Boil

A crawfish boil, like a New England clambake, is a community affair numbering several hundred eaters and several thousand pounds of crawfish. I do not exaggerate. With my own eyes I watched the Ragin’ Cajun Boil and Beer Festival held annually at the season’s final football game at Southwestern Louisiana University, better known as SLU. While the team played its heart out, spectators deserted the bleachers to engulf 10,000 pounds of freshly boiled pepper-hot crawfish ladled from tank-sized
