Po’ Boy Oyster Loaf with Garlic Butter

The acme of downtown New Orleans oyster bars is the one called Acme, at Iberville and Bourbon in the French Quarter, where on a normal day they open 5700 oysters at the marble bar. You stand at the bar with a frosted glass of beer and toss together your own sauce from the large bottles of ketchup, Tabasco, and oil, and bowls of freshly grated horseradish on the counter.
