Bread pudding is one of those traditional thrift dishes that appear on high tables as well as low, although most folk remember it as either loved or hated nursery food. Nora Ephron loves the bread pudding at Chez Helene in New Orleans because “It tastes like caramelized mush.” Commander’s Palace up-scales it into a Bread Pudding Soufflé, while Prudhomme thickens it with raisins and pecans and smothers it in Lemon Sauce and Chantilly Cream.
