Squeezer’s Okra Fritters

“People think I’ve gone to so much trouble in my cooking when all I’ve done is run into the garden and pick some itty-bitty okra or squash,” Squeezer says, in explaining what makes a good okra fritter. What makes an okra fritter good is itty-bitty okra fresh from the garden. The rest is easy. Or so she says. When I had trouble making Squeezer’s fritters up North, she mailed me a package of them, and not even a four-day journey defeated them. I ate up every one.
