Judy McConnell makes scalloped oysters the way Mrs. Champney did. Cora Ambrose Champney was born in 1885 in Rowley, Massachusetts, and she died at age ninety-seven in Bedford. Cora made oysters “the way I used to see my grandmother make them’ she said, “starting with a layer of crumbs rolled with a rolling pin and moistened with oyster liquid and butter and put in the oven.” Her grandmother might have added, as Mrs. Chadwick did in her 1852
