Maria Parloa made the name “Appledore” synonymous with New England after the publication of her Appledore Cook Book in 1872, named for the Appledore House on the Isles of Shoals in Maine, where she served as a cook. Like Amelia Simmons, Maria was an orphan turned cook to support herself, first among private families, then in resort hotels, and finally at her own cooking school in Boston in 1877.
