Pork Pot

The combination of meat and fruit is another variation on the theme of sweet and sour in Germanic cooking. Some call this combination of pork and apples, potatoes and onions, sweetened with sugar and soured with vinegar, “heaven and earth.” A contributor to The Flavor of Wisconsin calls it by its humbler name, “Pot Essen,” which means roughly “pot-eat.” Betty Westra of Waupun, Wisconsin, serves it wi
