Once you’ve done jerky, can pemmican be far behind? Pemmican comes from pemikariy an Indian word for grease and one so identified with Indian ways that when the Hudson’s Bay Company fought it out with the Northwest Fur Company for trading rights, the battle was called The Pemmican War. Indians everywhere made pemmican because Indians everywhere jerked meat. While meat without fat would keep for long periods, pounding the dried meat with animal tallow and flavoring it with dried berri
