Wild ducks tend to be as lean as their cultivated cousins of Long Island are fat. Ducks there are aplenty in the Northwest, both wild on their migratory route between Baja and Alaska and tamed under the careful and exacting scrutiny of Oriental duck fanciers intolerant of fat.
