Since California is the home of the American salad, we find foods of all kinds there turned into salads. This one is made of celery braised in chicken stock and garnished with tomatoes, anchovies, and eggs in a basil vinaigrette. The name “Victor” comes from a once-famous chef, Victor Hirtzler of the Hotel St. Francis in Union Square, San Francisco. The Portland Woman’s Exchange Cook Book listed Celery Victor among its recipes in 1913
