  • pints milk
  • 8 oz sugar
  • 5 oz

Method

Bring the milk to the boil in a large saucepan. Stir in the sugar and rice. Take the pan off the heat, then, stirring all the time, sprinkle in the mastic powder. The pan should still be steaming hot, but should not come back to the boil after this has been added, or the mastic gets hard and stringy.

Mix the cornflour with a little water to form a thin paste. Whisk this with the egg yol
